Wild Boar Chop in a Cinnamon Apple Buerre Blanc

Yield: 1 servings

  • 1 rack wild boar chops, frenched (may be substituted with pork chops)
  • Cinnamon Apple Buerre Blanc, see recipe
  • Salt and freshly ground black pepper to taste

Cut rack into 4 double chops. Season with salt and pepper. Cook on the grill (turning often) about 12-15 minutes or until medium. Place on a plate and serve with Cinnamon Apple Buerre Blanc.

Cinnamon Apple Buerre Blanc

Yield: 1 servings

  • ¼ cup lime juice
  • ½ cup apple juice
  • 2 Tablespoons rice vinegar
  • ¼ cup shallots
  • 1 Tablespoon fresh garlic, finely chopped
  • 1 teaspoon cinnamon
  • 2 Tablespoons maple syrup
  • 2 Tablespoons lime juice
  • ½ pound butter, cut into small pieces
  • Salt and pepper to taste

Over medium heat reduce first five ingredients until a thick glaze forms. Remove from heat. Stir in cinnamon, maple syrup and lime juice. With a whisk, over very low heat, beat in butter until melted. Remove from heat and place in a warm area.
