Lightly oil 10 4oz molds with flavorless oil. Combine 1 cup yogurt and 1/3 cup cream in a medium stainless steel bowl. Whisk to combine. Sprinkle gelatin over and let bloom. Meanwhile, heat 1 cup cream and 1 cup sugar over medium heat. Bring to a boil to dissolve sugar and stir this mixture into the "bloom". Put over water bath on medium heat and cook until gelatin is dissolved. Remove from heat. Whisk in last addition of yogurt (3 cups) and mix until thoroughly combined. Strain through fine mesh sieve or cheese cloth and pour into oiled molds. Chill for at least two hours. To serve, run small pairing knife around edge of mold, and turn out gently onto plate.
