Sheep's Cheese in Grape Leaves
.... makes 4 servings
Ingredients:
- 1 lb. fresh sheep's cheese
- 1 tsp. each fresh chopped: thyme, rosemary, summer savory (if available), fresh or dried lavender, fresh cracked black pepper
- 1 jar grape leaves in brine (rinsed)
- Extra virgin olive oil
Lay 2 grape leaves on cutting board, joined together ar the bottoms (vein side up)
Place sheep's cheese on top. Sprinkle with herbs and pepper.
Wrap sides up over top to seal. Place in oil and marinate overnight. Drain well (can reuse oil).
Place on grill for one and a half minutes each side.
Serve with flatbreads, crackers or grilled country bread and olives.
