Scampi Provencale recipe
To 1/2 cup lemon juice, add Artichoke heart - Let stand In a large skillet cook 1/3 cup minced shallots in 1/4 cup butter over moderate heat, stirring for 3 minutes until softened.
Add 2 lb. large shrimp, shelled and deveined sautˇe over moderately high heat stirring for 2 minutes.
Add "herbe de provence" cook mixture, stirring for 30 seconds.
Add 1 lb. can plum tomatoes drained and chopped add artichoke hearts reserve lemon juice , Cook mixture, stirring for 2 minutes.
Add 1/2 cup dry white wine, swirl in 3 tablespoon butter cut into bits, 5 teaspoons reserved lemon juice, add salt, pepper.
Transfer mixture to baking dish garnished with homemade bread crumbs mixed with parmesan cheese-set under broiler until slightly brown.
Garnish with chopped parsley.
