Fresh Pears Corrado Style Pere Alla Corrado recipe
- 2 lbs. fresh ripe Bosc or Cormice Pears
- 2 cups dry white wine
- 1 cup granulated sugar
Peel the pears with a peeler rather than a knife, then cut them lengthwise into quarters or eights, depending on size. Place the pieces in a crockery bowl and pour the wine over them. Let pears marinate for 30 minutes.
Put sugar in small saucepan and place it on a low flame until the sugar is completely carmelized and golden.
Pour the carmelized sugar over the pears and let stand at room temperature until all the sugar is dissolved in the wine.
Place the pears in the refrigerator for at least 3 hours, then serve. This dish is better prepared a day in advance.
