Fish with Green Peppercorns and Blue Cheese recipe
Put 2 lbs. of fillets of cod or any firm white fish.
Cut into serving pieces in a dish.
Sprinkle them with 3/4 tsp. of salt and chill them covered for 30 minutes.
Drain the fish, pat it dry with paper towels. In a skillet saute fish and 2 cloves of garlic in 2 tbsp of butter and 2 tbs. of oil over moderately high heat for 3 minutes on each side. Add 3/4 cup of wine.Sprinkle the fish with 2 tbsp. lemon juice. 1 tbsp. minced parsley. 1 tsp. drained green peppercorns. 1/2 tsp. tarragon--- spoon juices over fish and sprinkle with 3 tbsp. crumble blue cheese. Simmer mixture for 3 minutes, covered, until the cheese is melted and transfer to a heated serving dish. (If thin, don't turn over fish so it doesn't fall apart).

OPTIONAL:Before putting crumbled blue cheese, cover fish with 2-3 fresh tomatoes chopped coarsely, then cheese. Serve with plenty chopped parsley and basil.
