Chicken a la Theresa recipe
- 5 chicken breasts - skinned, boned and halved. Marinate in enough white wine to cover - 2 hours.
- 1 lb. mushrooms - sliced,
- 12 pitted green olives - chopped
- 1 clove of garlic - chopped
- 3/4 stick of butter
- 1/4 cup heavy cream
In a large skillet saute mushrooms and garlic in butter until lightly browned, add olives and heavy cream. Cook the mixture over moderately high heat, stirring until cream is absorbed. Prepare chicken and arrange them in a buttered shallow baking dish large enough to hold them in one layer. Spread the mushroom mixture over the breasts, add a little of the wine (dribble). Cover the dish with a buttered sheet of wax paper and foil. Bake in preheated oven (350 degrees for 15-20 minutes or until cooked through). Transfer chicken to a heated platter and garnish with minced parsley and sautéed cherry tomatoes.
