Quick
Stir-Fried Snow Peas or Sugar Snap Peas
There's
nothing to this, but if your peas are fesh, it's sensational.
Yield:
4 servings
Ingredients:
- 2 tablespoons
peanut, canola, or other oil
- About
1 1/2 pounds snow or sugar snap peas, washed and trimmed
- 2 tablespoons
soy sauce
- 1 tablespoon
dark sesame oil (optional)
Method:
1. Place
the oil in a large in a large, deep skillet or wok and turn the heat to
high. When the oil begins to smoke, toss in the peas and cook, stirring
almost constantly, until they are glossy, bright green and begin to show
a few brown spots, about 5 minutes.
2. Turn
off the heat and remove to a platter. Drizzle with soy sauce and sesame
oil, if you like, and serve.
