This basic Irish dish can be made overnight in an electric slow cooker,
using 1 cup porridge oats to 3 cups cold water and a sprinkling of
salt.
The more traditional method follows:
- 1
quart water
- 1
cup Irish oatmeal (McCann's is a favorite brand)
- Good
pinch of salt
Put
all the ingredients into a saucepan and bring to a boil, stirring.
When the porridge is smooth and begins to thicken, reduce the heat
to a simmer and cook gently for 25 minutes, stirring occasionally.
Makes 4 generous servings.
StarChefs Note:
Many people like to serve porridge with a little milk or cream and
a sprinkling of sugar. Others like to add emblishments such as raisins
and other dried fruits.
