In a very unassuming area of Houston,
Chef Claire Smith and her partner
Carl Eaves opened a restaurant serving
multicultural cuisine and transformed a shell
of a building which once housed
the Daily Court Review.
Chef Smith turned 30 on the day
that I interviewed her. What most amazed
me was her mingling of cuisines from Spain,
France, and Italy with American comfort food.
Claire says, I became very impressed
with the rustic variations on traditional
French, Spanish and Italian cooking.
