The
following ingredients can be found in specialty stores and most
grocery stores.
Saffron
A spice that is the dried, yellow-orange stigma of a crocus' purple
flower. It is the most expensive spice in the world.
Aged Sherry Vinegar
A nutty brown-colored vinegar with a full, round flavor made from
sherry and aged in wooden barrels in a process similar to that
used to make sherry. Aged from a few years to 10 years.
Squid Ink
From the ink sac of the squid. Used to flavor pasta, risotto
and sauces.
Spanish Chorizo
Sausage made from smoked pork, seasoned with garlic and powdered
chiles.
Dried Corn Husks
Used for wrapping tamales, they must first be soaked in water
until they soften. Dried corn husks are available at Latino markets.
Posole
Whole hominy (dried corn kernels) processed with lye and
hulled.
Cabrales Blue Cheese
Spanish blue cheese made from cow's and sheep's milk.
Manchego Cheese
A firm Spanish cheese made from sheep's
milk.
Tomatillo
They look like green tomatoes, but they are not. They come from
an entirely different family. Used in green salsas, relishes and
vinaigrettes.
Pomegranate Molasses
Pomegranate juice that has been reduced to a thick glaze.
Paprika
A blend of dried, red-skinned chile.
